Mini Lemon and Ginger Cheesecakes by behindthesofa Mini Lemon and Ginger Cheesecakes by behindthesofa
I made a cheesecake yesterday and had some left over so I put them into these little ramekins. I also found a mould for chocolate spoons recently and figured they'd go great together. It was a really nice combination.

They could have done with being colder but other than that they were great!

Honestly I sort of made it up as I went along. I used a lemon cheesecake recipe and just added ginger. Grated ginger for the top and gingernut biscuits for the base. Hope that helps a bit.

The flavor combination sounds really delicious. I like the composition: simple, well-balanced, good color combination and nothing distracting. I would definitely try those))

Thanks so much! It was a pretty nice combo. If I made it again I'd make it with more ginger though :D

Where did you get the mould for the spoons? What a freaking awesome idea!

Cheesecake looks great too and I bet that combination is awesome.

I got it in a shop called Lakeland. [link] is the link to it if you're interested. The combination was great too. It went down well with my friends anyway :D
